Glossary
Words that come up when people talk about running a hospitality business with Yumee — in plain English.
Allergen matrix — The grid showing which of the 14 named allergens is in each dish. Kept per recipe, so a menu change updates the labels.
Bump — Marking a ticket as done on the kitchen screen, the way a chef used to spike a paper docket.
COGS — Cost of Goods Sold: what the ingredients in a dish actually cost. Worked out from your recipes, so you can see the margin on every item.
Cover — One diner. Booking platforms usually charge per cover; we do not.
Coursing — Holding back the mains until the starters are cleared, so the kitchen fires each course at the right moment.
Deposit — An amount taken when a booking is made, set against the bill on the night. Used on large tables and busy dates to cut no-shows.
Kitchen display (KDS) — The screen that replaces the kitchen printer. Tickets arrive live, with timers and station routing.
Natasha’s Law (PPDS) — UK rule requiring a full ingredient and allergen label on food packed on site for direct sale.
No-show — A booking that never turns up. Reminders and deposits are the two things that reduce it.
PAX — The card-machine hardware the till can run on directly, so one device takes the order and the payment.
Pay by link — A payment link you send to a customer by email; they pay from their phone, with no card reader involved.
QR table ordering — The guest scans the code on the table, orders and pays from their own phone. No app to install.
Rota — The staff schedule: who works which shift. Can be drafted from days off and shift preferences, or sized to your busy hours.
RTI / FPS — The payroll report HMRC expects every time you pay staff. It is sent from your payroll software.
Shift4 — The card payment provider behind the till, your ordering site and QR payments.
Tronc — The arrangement for pooling and sharing tips, with its own tax treatment in the UK.
Turn time — How long a table is expected to be occupied. Drives how many bookings a service can take.
Z-report / end of day — The daily close that finalises the day’s sales and VAT, run from the till and archived for your accountant.
